MAINTAINING YOUR KNIVES
CUTTING TECHNIQUE
The Chef’s Chopper Knife is designed for both precise slicing and heavy chopping. When slicing, we recommend using a “hand saw motion” by pushing the knife forward and downward and then pulling it back towards your body.
Recommendation: Use a cleaver for hard materials such as frozen foods or bones. Slicing knives are best for precision cutting.
SHARPENING AND HONING
To maintain your knife’s performance, we recommend:
- Honing: Use a ceramic or steel honing rod weekly.
- Sharpening: When necessary, sharpen the blade with a traditional whetstone (medium and fine-grit).
How to use a whetstone:
- Soak the stone in water for 5–10 minutes until no more air bubbles appear.
- Apply water during sharpening for optimal sharpness.
- Place the stone on a non-slip surface, such as a towel.
- Hold the blade at a 10–15° angle and move it alternately forward and backward across the stone.
- Repeat the process on both sides of the blade.
- Remove any burrs by lightly pulling the blade against the stone.
- Rinse both the stone and knife thoroughly and dry them.
WASHING AND DRYING
Hand wash the knife with mild soap, free from bleach or citrus. Rinse and dry the knife thoroughly immediately after washing to prevent rust.
Note: The wooden handle may change over time due to climate, light, and the natural oils from your hands.
CUTTING SURFACE
Use a high-quality cutting board made from medium-soft wood, such as hinoki. Avoid hard materials like glass, marble, or ceramic, as they can damage the blade.
STORAGE
Store the knife in a wooden block, a drawer insert, a knife sheath, or a case. Avoid storing knives loosely in a drawer.
